Program

‘Fresh Creations’ was our topic, introduced by Past President, Jim Ponder…

Nicole Estrada, a neighbor and friend to Past President Kelly Mayberry, was our speaker. A catering and personal chef, Nicole ‘earned her stripes’ in the corporate world, however was drawn to healthy cooking and eating because of health issues experienced by her parents that could have been overcome with proper eating habits. Nicole is a Rotarian and a member of the Escondido Rotary Club…

Nicole Estrada speaking to Sunrise Rotarians…

Nicole described the benefits of eating the right foods as helping our bodies with memory functions… She also shared that the brain is over 40% fat, and the food we eat needs to contribute to the well-functioning of our brains and our entire bodies…

The biggest motivation for her in changing her life career direction by attending culinary school, was the impact on poor eating habits negatively affecting the health of her loved ones…

Nicole described the use of sugar substitutes, such as ‘Monk Fruit’ sweetener, and the value of wild foods such as wild blueberries… She also shared that many of the healthy foods she was describing are available at local stores like Trader Joes and Costco…

Nicole prepared some treats for us indulging some “Chia Pudding”…

Nicole also described the value of non-dairy products such as oat milk, almond mild land low-fat coconut milk…

Nicole’s company provides catering and personal chef services… She described circumstances where her efforts are focused on helping people with eating disorders to gain proper nutrition…

Nicole was also concerned about the health of President Richard’s precious bell… She is shown her adding some healthy support to the bell… Hopefully enabling the bell to avoid being stolen and abused with bad food…

Nicole’s company and the resources she provides were included in a handout shared with all Club Members and can be found on her website at freshcreationssd.com…

To all; be safe and be well…. God Bless those men and women that carry the load at our medical facilities, and God Bless the first responders… May our governmental leaders be wise, thoughtful and smart as this pandemic is overtaken by our hard work and collective support…
